BTW - how long does beer 'keep' once the keg is opened? 12 hours? or is it more?

Depends upon the temperature I guess.(Talking about draught) . I was rather flabergasted to learn that one of the most difficult things involved in the process of brewing and bottling beer was " sticking a label on the cold wet bottle with glue " !!!!!!!!!!!!
