Generally the steels you will find at the regular sheet metal fabricators are hot or cold rolled mild steel. These have a hardness of 40HRC or lower. Also they have a low carbon content, hence not worth considering for knife making.
If you approach some one making pharma equipment you may be able to source stainless in 316, 420 or even 440. But these too are generally of the low carbon variant.
The guys you must approach are the ones who make saw tools or cutting tools. They will have some high carbon steels used in saw blade making. These are generally high carbon steels that are pre hardened and tempered. the same lines you cpuld also pick up old scrapped saw tools to make knife blanks out of. Thats what most of us do.

*i am no guru or expert tho :P

Fabricators use Mild Steel, Not good enough for knife. You can practice making knife on them, shaping sanding etc.
Spring steel is good. 1095 steel easy to work, heat treat and temper. Rusts.
(even i am looking for some steel, atleast 1095. Here in Punjab no retailers nearby, and every one else talk in how many tons needed   )
